Food Scientist

Food scientists and technologists use chemistry, biology, and other sciences to study the basic elements of food. They analyze the nutritional content of food, discover new food sources, and research ways to make processed foods safe and healthy. Food technologists generally work in product development, applying findings from food science research to develop new or better ways of selecting, preserving, processing, packaging, and distributing food. Some food scientists use problem-solving techniques from nanotechnology—the science of manipulating matter on an atomic scale—to develop sensors that can detect contaminants in food. Other food scientists enforce government regulations, inspecting food-processing areas to ensure that they are sanitary and meet waste management standards.

Education Needed

While studying food science, it's wise to gain practical experience in the food industry via an internship at a food company, according to experts.

A bachelor's degree in food science or a related academic discipline is the usual entry-level credential in the field of food science, though a graduate degree may expand career options, experts say. They add that anyone who wishes to become a research and development food scientist should plan to obtain a master's or doctorate degree.

Duties

Your job responsibilities will depend upon your food science specialization.

Quality Assurance Specialization
Your job is to monitor food production and ensure that food-making processes are working correctly. You'll also analyze the food to determine the amount of nutrients, sugars, vitamins and fats in them so manufacturers can properly label the food.

Research Specialization
You'll discover and experiment with different food storage methods and food additives, depending on your assignment. If research isn't interesting to you, then you can work in development and focus on making and improving existing food products.

Processing Specialization
You'll work on techniques like canning, drying, evaporation, blanching, baking and pasteurization. Finally, as a regulatory food scientist, you'll go around enforcing food regulations for the government or making sure that your food industry employer is following regulations.

Wages

Your salary as a food scientist will likely depend on the industry you decide to go into. The U.S. Bureau of Labor Statistics (BLS) reported that food scientists in all industries had a mean annual wage of $76,190 in May 2019. Food scientists who were in the top ten percent of wage estimates had yearly incomes of $124,660 or more. The BLS reported in 2019 that the top-paying industry for food scientists was within Federal Executive Branch (OES Designation), which could include occupations in management, production or healthcare support; the hourly mean wage for food scientists working in this industry is $49.37, which amounted to a yearly mean salary of $102,700.

The BLS noted that the employment of food scientists and technologists was expected to see 4% growth from 2019 to 2029.
